{"id":10000085,"date":"2017-02-27T15:07:50","date_gmt":"2017-02-27T14:07:50","guid":{"rendered":"http:\/\/thesignmoak.com\/?p=10000085"},"modified":"2018-01-05T12:20:17","modified_gmt":"2018-01-05T11:20:17","slug":"coffee-and-surroundings","status":"publish","type":"post","link":"https:\/\/thesignmoak.com\/en\/coffee-and-surroundings\/","title":{"rendered":"Coffee and surroundings"},"content":{"rendered":"<p><span style=\"font-weight: 400;\">This recipe will make you rediscover springtime with its delicate sprouts and blooming almond trees, while recalling the winter that just passed with its beetroots and daikon, which grow in the cold covered by the soil. <\/span><\/p>\n<p><strong>Savoury cannoli wafer with coffee <\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Ingredients for 4 people: <\/span><\/p>\n<p><span style=\"font-size: 1em; letter-spacing: 0em;\">\u00a0<\/span>for the wafer<br \/>\n85 g soft wheat flour<br \/>\n15 g ground coffee<br \/>\n30 g Marsala wine<br \/>\n3 g whole sea salt<\/p>\n<p style=\"font-weight: 400;\">for the cannoli filling<br \/>\n80 g almond ricotta<br \/>\nfor the beetroot tartare<br \/>\n100 g steamed beetroot<br \/>\n3 g lemon juice<br \/>\n3 g extra virgin olive oil<br \/>\na pinch of sea salt<br \/>\nblack pepper to taste<\/p>\n<p style=\"font-weight: 400;\">for the daikon spaghetti<br \/>\n40 g daikon<br \/>\nextra virgin olive oil to taste<br \/>\nsea salt to taste<br \/>\na handful of lemon balm leaves<\/p>\n<p style=\"font-weight: 400;\">for the carrot mousse<br \/>\n80 g steamed carrots<br \/>\n3 g freshly grated ginger root<br \/>\nextra virgin olive oil<br \/>\nsea salt<\/p>\n<p style=\"font-weight: 400;\">for the decoration<br \/>\n20 g mixed sprouts including onion, red cabbage and fenugreek<\/p>\n<p><span style=\"font-size: 1em; letter-spacing: 0em;\">\u00a0<\/span><span style=\"font-weight: 400;\">Prepare the mixture for the cannoli by making a well in the centre of the dry ingredients and pouring marsala into the centre. Process the mixture until it\u2019s smooth and compact. Leave to cool in the fridge for about half hour and then make a thin fillo dough out of it and cut 6-cm circles with a round cutter. Wrap the dough around the typical cannoli forms made of steel and stick the two ends together with some water. Fry in hot oil until the wafers are golden brown. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Cut the beetroot (that was previously steamed) as if it was tartare. Savour with a drizzle of lemon, salt, oil and black pepper. Steam the carrots; once done, add some cooking water, extra virgin olive oil, salt to taste and some freshly grated ginger root. Blend the mixture until it turns into a soft and spumy cream.
