Considered a niche phenomenon until recently, nowadays more and more people, mainly women aged between 25 and 34, \u201cconverted\u201d to such diet, making a choice not only connected to health, but also ethics. Wandering Chef Carmelo Chiaramonte will accompany us through a new journey in the section \u201ccoffee and surroundings\u201d, and will make you discover how vegan cuisine can be delicious, easy to prepare and within everyone\u2019s means.<\/span><\/p>\n<\/div>\n<h3 id=\"_idContainer695\" class=\"_idGenObjectStyleOverride-5\"><span class=\"CharOverride-27\">Vegetarian Spring<\/span><\/h3>\n<div id=\"_idContainer696\" class=\"Cornice-di-testo-di-base\">\n<p class=\"testo-articoli-ENG\"><span lang=\"en-GB\">In the silence of spring nights, they boom like very slow fireworks:\u00a0<\/span><span class=\"CharOverride-14\" lang=\"en-GB\"><em>magic<\/em>\u00a0<\/span><span lang=\"en-GB\">plants in form of suckers, sprouts, spears, buds, flowers and blooms. The vegetal rainbow<\/span><span lang=\"en-GB\">\u00a0starts with a kaleidoscope of fantastic flavours. \u201cNew\u201d plants feature that nice energy of Mediterranean kitchen that has been left aside a bit, actually the one that enchanted nutritionists of half of the world and was defined in the first Sicilian vegetarian cook book written by Duke Alliata di Salaparuta in 1930: Vegetarianism and raw naturism (Sellerio ed.). Here we have one of the fifteen Sicilian variations of Caponata, famous for including vegetables of any kind in sweet-and-sour spice.<\/span><\/p>\n<p class=\"testo-articoli-ENG\"><span lang=\"en-GB\">The butcher\u2019s broom (<\/span><em><span class=\"CharOverride-14\" lang=\"en-GB\">ruscus aculeatus<\/span><\/em><span lang=\"en-GB\">), is unusual and only knows by few people, but can be replaced with asparagus taken from uncultivated fields. Place the pan over a low flame, close and cook for 5 minutes; add garlic and green onions cut into fine julienne strips to the artichokes and put the pan again over high flame for two minutes. Perfume the plants with honey, vinegar, olives and the other herbs.<\/span><\/p>\n<p class=\"testo-articoli-ENG\"><span lang=\"en-GB\">Caponata is one of the few Sicilian dishes that hungry forks prefer to\u00a0<\/span><span class=\"CharOverride-14\" lang=\"en-GB\">attack<\/span><span lang=\"en-GB\">\u00a0only when cold, as long as it is accompanied by slices of bread that burst forth the grades of body temperature.
