Promoting the excellence of high-quality coffee. This is the main purpose of SCAE (Speciality Coffee Association of Europe), the worldwide main organisation grouping professionals of each field in the coffee industry. In this perspective, Caffè Moak, being the only company in Sicily boasting an Ast (Authorised Scae Trainer), hosts courses for Scae certifications, the most prestigious certifications worldwide for aspiring barmen and professionals. The first two appointments in the region of Sicily were held in the training room of Moak’s office district in Modica. Special trainers Andrea Lattuada and Marcello Vitello attended the course, being respectively national coordinator and communications manager of Scae Italy. Joined by Marco Poidomani, for[me]moak Ast trainer, who held the courses of “barista skills” together with Lattuada and Vitellone. Next scheduled appointment for the Scae courses promoted by Caffè Moak will be in November. The following dates will be every two months and will be published on the website store.caffemoak.com/it/formetraining. Andrea Lattuada, Marcello Vitellone and Marco Poidomani will hold courses and certifications.
The three-day course includes three modules: “introduction to coffee” lasting half a day is addressed to beginners, in order to introduce them to the world of speciality coffees. The second module is the one of “basic barista skills” representing an excellent introduction to basic skills in a specific field and helps attendees to decide whether to go on and enhance their knowledge. The third level is “intermediate barista”, suitable for those who are already working in the sector and have a good knowledge of basic skills. These courses last at least one or two days. Aim of such meetings is to promote and spread the culture of quality coffee and increase coffee standards through a deep training activity, enhancing knowledge and education. These requirements will allow obtaining the sought-after Coffee Diploma System (CDS), the most renowned certification for barmen worldwide.
