Coffee and healthy surroundings – a quick and easy recipe, ideal for the summer.
Mangetout are a type of peas whose pods are eaten as well as the peas inside them. They are rich in remineralizing properties, such as iron, and great allies against tiredness and anaemia. The burst of energy is given by coffee. We like to consider it a fanciful appetizer or quick pre-dinner dish. Vegan chef Roberta Tribastone prepares it for thesignmoak.
Ingredients for 4 people:
for the mangetout:
200 g mangetout
150 g flour
200 g water
200 g breadcrumbs
1 espresso Moak Aromatik
1 spoon of rosemary
Salt to taste
Extra virgin olive oil for frying
for the mayonnaise:
100 ml soy milk
300 ml maize oil
Salt to taste
saffron powder to taste
(1) Wash the mangetout and blanch them in salted water. (2) Use a whisk to prepare a batter with flour, water and coffee. Prepare a bowl with breadcrumbs and finely minced rosemary. (3) Dunk each piece of mangetout first in the batter and then in the breadcrumbs.
(4) Fry them in hot oil until the breading is golden and crispy. Then put them on a paper towel to have the oil absorbed.
(5) Meanwhile, prepare the mayonnaise: emulsify milk and maize oil with the help of a blender until the mixture is thick; then add saffron and salt to taste, and mix again.
(6) Add salt and serve the hot mangetout together with the mayonnaise.
